Ingredients

  • 2 slices Goldminer® Sourdough Square Bread
  • 2 slices Muenster cheese
  • 2 leaves lettuce
  • 1 radish, sliced thin
  • 4 cucumber slices, sliced thin
  • 1 slice of red onion
  • ¼ red pepper, sliced
  • ¼ carrot, sliced
  • 4 asparagus tips, blanched
  • 2 avocado slices
  • Tzatziki sauce (recipe follows)

  • Tzatziki Sauce Ingredients:

  • ½ cup finely grated cucumber
  • 1 cup thick whole milk Greek yogurt
  • ½ tablespoon extra-virgin olive oil
  • 1 tablespoon lemon juice
  • 1 garlic clove, grated
  • ¼ teaspoon sea salt
  • 1 tablespoon chopped dill

Directions

  1. To prepare the tzatziki sauce, place the grated cucumber on a towel and gently squeeze out excess water. In a small bowl, combine the cucumber, yogurt, olive oil, lemon juice, garlic, salt and dill. Chill until ready for use.

  2. To build the sandwich, start with the cheese, layering ingredients onto one bread slice. Drizzle the Tzatziki sauce over the veggies. Cover with the remaining slice of bread. Enjoy!
