Sourdough Asparagus Toast

  • 2 slices Goldminer® Cracked Wheat Sourdough Square Bread
  • 1 lb. fresh asparagus, shaved
  • ½ cup grape tomatoes, halved
  • 1½ tbsp. olive oil
  • 1 tsp. lemon juice
  • Pinch salt
  • Pinch pepper
  • Spicy Hollandaise (recipe follows)

Spicy Hollandaise Ingredients:

  • 2 egg yolks
  • 2 tsp. lemon juice
  • ¼ tsp. salt
  • ¼ tsp. smoked paprika
  • ¼ tsp. cayenne pepper
  • 1 stick unsalted butter


  1. Preheat oven to 400˚F.
  2. Toss asparagus and tomatoes with olive oil, lemon juice and salt. Place on a baking sheet and roast for 10 minutes. 
  3. Make Spicy Hollandaise Sauce. Whisk together egg yolks, lemon juice, salt, paprika and cayenne. Melt butter in a saucepan. Temper the egg yolk mixture by adding a spoonful of butter and whisking each time. Continue until all butter has been incorporated. 
  4. Toast bread. Ladle on desired amount of Spicy Hollandaise Sauce, and top with roasted asparagus and tomatoes.
